Chef Johnny Hernandez is a celebrated chef, entrepreneur, and founder and President of Grupo La Gloria and True Flavors Inc.. He is one of the premier Mexican cuisine chefs in the United States and a recognized authority on Mexican cuisine and culture. He first garnered notoriety as a rising star on the culinary scene in 2010 with the launch of his acclaimed flagship concept, La Gloria. His culinary ventures have since expanded to become Grupo La Gloria, a diverse and growing portfolio of signature restaurants and culinary projects.

- Tortilleria La Gloria reflects Chef Hernandez’s commitment to traditional culinary practices. The molino provides the fresh corn products made from locally grown, non-GMO corn for each of his establishments in the San Antonio area.

La Gloria is a place that was created to celebrate the rich and delicious street foods from interior Mexico. From tacos al pastor in Mexico City, tlayudas in Oaxaca, to coctéles de mariscos from Veracruz, Mexico’s street foods are as unique and colorful as its traditions, people and culture.
La Gloria is that vision realized. The menu reflects the culinary treasures I discovered in the pueblitos, mountains and coastal villages of Mexico — from the aromatic carnitas of Michoacán and the succulent tortas ahogadas of Guadalajara, to the complex and refined tequilas born from Jalisco’s blue agave fields.

The Frutería offers fresh fruit, smoothies, tortas and tostadas by day, then transforms into a contemporary Botanero by night. The Fruteria y Botanero by Chef Johnny Hernandez offers Tortas, Tostadas, and Tequilas! By day enjoy fresh juices, fruit cups, tortas and tostadas for breakfast and lunch. By night enjoy botana-syle Mexican tapas and fruit-infused tequilas and cocktails.

The fleet of bright pink trucks will bring drinks and select food items to customers. The boozy version of a summer sweets truck will be stocked with La Gloria favorites that you can purchase in single-order sizes or packages.
The menu includes La Gloria’s house margarita (frozen or on the rocks), the Blue Margarita, the Prickly Pear Margarita and the Mango Margarita.
Taco kits and favorites from The Fruteria, another Hernandez restaurant, will also be available along with snacks like street corn, chips, salsa and queso.

In March 2014, Chef Hernandez opened his third dining concept, El Machito, located in the former Alamo Cement Company building in San Antonio’s Quarry Market. A celebration of all things meat, El Machito specializes in mesquite grilled meats prepared in the style of the carne asadas of northern Mexico and the campestre style of Guadalajara. Specialties include grilled heritage pork, hand-made Mexican sausages and the chef’s signature dish– locally sourced cabrito asado. Meats are prepared on an open hand-crafted asadero (grill), which serves as the focal point of the casually elegant space. Diners can enjoy traditional Mexican side dishes and garnishes, along a full service bar that boasts the most extensive selection of Mexican wines in the US.
